Chicken-Apple Crunch Salad
2 cups cubed cooked chicken breast

1 cup diced Granny Smith apple
1/2 cup diced celery
1/4 cup raisins
2 Tbsp. chopped green onions
1/3 cup low-fat mayonnaise
1 Tbsp. reduced-fat sour cream
1 tsp. fresh lemon juice
1/4 tsp. salt
1/4 tsp. freshly ground black pepper
1/8 tsp. ground cinnamon

Combine first 5 ingredients in a large bowl. Combine mayonnaise and remaining ingredients, stirring well with a whisk. Add mayonnaise mixture to chicken mixture, tossing well to coat.
4 servings (serving size: 1 cup)

My notes: I made this last year and really liked it. With the apples and cinnamon in it, it reminded me of fall! I left the celery out because I don't like it and I used some onion powder because I didn't have green onions. Instead of raisins I used dried cranberries.
